Ingredients
- 500 g chestnuts
- 25 g ginger
- 200 g sugar
- 2 tbsp lemon juice

Preheat the oven to 220°C (425°F) with upper and lower heat. Score the chestnuts crosswise and roast them in the preheated oven or a heavy pan for about 30 minutes until they are browned and the interior is golden yellow. Remove, let cool slightly, and peel.

Peel the ginger and cut it into two pieces. Caramelize the sugar to a golden color, then add 400 ml water, lemon juice, and ginger; bring to a boil. Add the chestnuts and bring everything back to a boil again. Transfer to clean jars and seal tightly.
