Cheesecake with Baileys and Candied Orange Zest

Ingredients

  • 150 g ladyfingers
  • 80 g softened butter
  • 1 packet vanilla sugar
  • 3 sheets white gelatin
  • 300 g cream cheese (pure)
  • 50 g sugar
  • 300 ml whipping cream (min 30% fat)
  • 30 ml Baileys
  • 2 untreated oranges
  • 150 g sugar
  • 50 ml orange liqueur

Instructions

    Finely crush the ladyfingers in a food processor. Mix with softened butter and vanilla sugar, divide into four tea glasses or dessert cups, and chill for 30 minutes.

    Soak gelatin in cold water for 10 minutes. Squeeze out excess liquid and gently warm in a small pot (do not boil). Whisk cream cheese with sugar until fluffy. Beat whipping cream to stiff peaks and fold into the cream cheese mixture. Remove 2 tablespoons, mix with gelatin, then return to the rest of the batter and stir smooth. Fold in Baileys. Spoon the cheesecake mixture into the glasses and chill for another 2 hours.

    Wash oranges hot, peel zest with a zester, squeeze one orange. Bring sugar, liqueur, and 20 ml orange juice to a boil, add zest, simmer on low flame for 10 minutes. Remove zest, garnish dessert with it, and serve immediately.
