Simple Peanut Cookies

Spoonsparrow’s Simple Peanut Cookies are quick to make, use few ingredients, and can be easily varied.

Ingredients

  • 100 g Soft Butter
  • 100 g Peanut butter
  • 120 g raw cane sugar
  • 1 pinch salt
  • 1 egg
  • 100 g spelt flour type 630
  • 100 g spelt whole‑grain flour

Instructions

    Cream the butter with peanut butter, sugar and a pinch of salt. Add the egg and mix well. Sift both flours over the mixture and knead into a smooth dough. Shape into two rolls and cover for about 30 minutes in the refrigerator.

    Cut each roll into 15 slices, place on parchment paper, and gently press a criss‑cross pattern with a fork handle. Bake the Simple Peanut Cookies in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 15 minutes until lightly golden brown. Cool on a wire rack.
