Ingredients

  • 175 g spelt flour type 1050
  • 150 g honey
  • a pinch of salt
  • 5 medium eggs
  • 90 g butter
  • 1 kg quark (20% fat)
  • 1 Organic lemon
  • 1 Vanilla bean
  • 50 g cornstarch

Instructions

    For the crust, combine flour, 50 g honey, a pinch of salt, one egg and cubed cold butter in a mixing bowl. Knead quickly into a smooth shortcrust dough, cover, and chill for 30 minutes.

    Meanwhile, drain the quark well. Rinse the lemon hot, pat dry, then grate its zest finely. Halve the lemon and squeeze out the juice. Split the vanilla bean lengthwise and scrape out the seeds.

    Separate the remaining eggs. Whisk egg whites with a pinch of salt until stiff peaks form. In a hand mixer, beat yolks and remaining honey until creamy. Fold in quark, 1 tsp lemon zest, lemon juice, vanilla seeds, and cornstarch. Gently fold in the meringue.

    Roll out the dough on a floured surface. Line a springform pan with parchment paper and press the dough into the pan. Spread the quark mixture evenly over the crust.

    Bake in a preheated oven at 180 °C (160 °C fan) for about 50 minutes. Remove, let cool completely, then release from the pan. Slice and serve.
