Grilled Vegetables with Feta

Ingredients

  • 2 Zucchini
  • 4 red bell pepper halves
  • 2 red onions
  • 6 tbsp Olive oil
  • Salt
  • 2 Garlic cloves
  • 1 red chili pepper
  • 2 tbsp lemon juice
  • 2 tbsp freshly chopped thyme
  • 250 g Feta

Instructions

    Wash and trim the zucchini, then slice lengthwise. Wash, halve, trim the bell peppers and cut into wide strips. Peel the onions and cut into thick rings. Grill the vegetables on a greased grill for about 10 minutes on all sides, lightly salting.

    For the dressing, peel and finely chop the garlic. Wash, halve, trim and finely mince the chili pepper. Mix with the garlic, remaining olive oil, lemon juice, thyme and salt, then taste to adjust seasoning.

    Arrange the grilled vegetables on plates, crumble feta over them, and drizzle with the dressing before serving.
