Ingredients
- 2 fresh egg yolks
- 1 pinch salt
- 1 tsp Mustard
- 1 lemon (juice)
- 250 ml olive oil
- 20 ml cognac
- 4 tbsp ketchup
- Cayenne pepper

When making the mayonnaise it is important that all ingredients are at room temperature. Whisk the egg yolks with salt, mustard and 1 tbsp lemon juice vigorously. Then, using a whisk or hand mixer, add a few drops of oil, then slowly drizzle in the remaining oil in a thin stream, adding only enough to bind the yolk into a thick, creamy mayonnaise.

Stir in the cognac and ketchup, season with salt and cayenne pepper.
