Ingredients

  • 1.5 kg Cauliflower
  • Salt
  • 4 tbsp Lemon juice
  • 250 g baby carrots
  • 150 g radishes
  • 1 handful tarragon
  • 2 tbsp Apple cider vinegar
  • 4 tbsp rapeseed oil
  • 1 tsp agave syrup
  • Pepper
  • 4 slices whole grain bread

Instructions

    Wash, trim and cut the cauliflower into small florets. Blanch in salted water with 2 tbsp lemon juice for about 5 minutes until slightly firm. Cool under cold water and drain well.

    Wash, trim and halve the carrots lengthwise. Wash, trim and slice the radishes thinly. Wash tarragon, shake dry and pluck the leaves.

    Whisk together remaining lemon juice, vinegar, oil, salt, agave syrup and pepper to make the dressing.

    Combine all prepared salad ingredients with the dressing in a large bowl and serve with whole grain bread.
