Pumpkin Salad with Dried Plums

Ingredients

  • 800 g pumpkin flesh (Hokkaido pumpkin)
  • 1 apple
  • 1 pear
  • 40 g dried plums
  • 2 tbsp Apple cider vinegar
  • 2 tbsp apple juice
  • 2 tbsp Rapeseed oil
  • 2 tsp apple molasses
  • 0.5 tsp turmeric powder
  • Salt
  • Pepper

Instructions

    Grate the pumpkin flesh coarsely. Peel, wash, halve, core the apple and pear, finely shred half of each, and dice the remaining halves into small cubes. Dice the dried plums as well.

    Whisk vinegar with apple juice, oil, apple molasses, turmeric, salt, and pepper to make the dressing. Combine all prepared ingredients, toss, and season the pumpkin salad with dried plums to taste.
