Ingredients

  • 150 g powdered sugar
  • 2 tsp cherry brandy
  • 1 tsp ground cinnamon
  • a pinch of ground cloves
  • 1 tsp grated nutmeg
  • 50 g almonds
  • 50 g hazelnuts
  • 50 g walnuts
  • 50 g candied orange peel
  • 50 g candied lemon peel
  • 1 untreated lemon (zest)
  • 1 tsp potash
  • 250 g flour
  • 100 g spelt whole‑grain flour
  • 100 ml cherry brandy

Instructions

    Bring the syrup to a boil with sugar, cinnamon, cloves and nutmeg. Finely chop the almonds, hazelnuts, walnuts, candied orange peel and lemon peel and add them with the lemon zest to the syrup; remove from heat and set aside. Gradually mix in two‑thirds of both flours combined with potash and add the cherry brandy. Let the remaining flour rest on a work surface. Pour the dough onto it and knead quickly. Let rise, then place on a parchment‑lined baking sheet and refrigerate overnight.

    Preheat the oven to 220 °C (428 °F) with fan or conventional heat.

    Slide the tray into the oven and bake for 15–20 minutes. Remove and let cool.

    For the glaze whisk powdered sugar with cherry brandy until thick; spread over the cookies and allow to set. Cut into pieces and serve.
