Vegan Jam Cookies

Ingredients
- 200 g Flour
- 80 g powdered sugar
- 1 Tbsp vanilla sugar
- 1 tsp Baking Soda
- 50 g cold margarine
- 1 tbsp soy cream
- 1 tbsp soy drink (soy milk)
- 1 Tbsp sparkling mineral water
- flour for dusting
- 100 g red jam (e.g., cherry)
Instructions

Mix the flour with the sugar, vanilla sugar and baking soda. Add the margarine in small pieces, the soy cream, soy milk and water, and quickly knead into a smooth dough. Wrap in foil and chill in the refrigerator for about 1 hour.

Then roll out on a floured surface to a thickness of 3-4 mm and shape into rectangles. Spread jam thinly over the dough and roll tightly. Rewrap in foil and chill again for another hour.

Preheat the oven to 200°C (400°F) with upper and lower heat.

Cut thin slices from the dough roll using a cold knife, place on a baking sheet lined with parchment paper. Bake in the oven for about 12 minutes until light yellow. Remove from the tray and cool on a wire rack.
