Simple Bulgur Salad

Spoonsparrow simple bulgur salad comes with only five ingredients and is perfect for take‑out.
Ingredients
- 250 g bulgur
- 500 ml vegetable broth
- 2 red bell pepper caps
- 200 g Cherry tomatoes
- 1 onion
- 2 Garlic cloves
- 3 spring onions
- 2 handfuls parsley (5 g each)
- 4 tbsp tomato paste (20 g each)
- 4 tbsp olive oil
- Salt
- 1 tsp hot paprika powder

Put bulgur in a saucepan. Bring vegetable broth to a boil, pour over the bulgur, stir well and let it soak for about 10 minutes; drain any excess liquid if necessary.

Meanwhile, clean, wash and dice the bell peppers and tomatoes. Peel and finely cube the onion and garlic. Trim and slice the spring onions into rings. Wash the parsley, pat dry, pluck the leaves, set a few aside for garnish, and finely chop the rest.

Mix tomato paste with olive oil and combine well with the bulgur. Fold in the prepared vegetables, season with salt and paprika powder, and serve the simple bulgur salad garnished with parsley leaves.
