Zucchini Noodles with Mushrooms

Ingredients
- 1 kg zucchini (4 zucchinis)
- 400 g lemon shiitake or oyster mushrooms
- 1 handful flat-leaf parsley
- 1 Garlic clove
- 1 Shallot
- 0.25 red chili pepper
- 3 tbsp olive oil
- 1 Organic Lime
- Salt
- white pepper

Wash, trim the zucchini and use a spiralizer to create spaghetti-like strands.

Clean the mushrooms; cut in half or leave whole depending on size. Wash parsley, shake dry, pull leaves from stems and finely chop. Set aside some for garnish.

Peel and dice the garlic and shallot. Wash the chili, remove seeds and white membranes, then finely chop. Heat oil in a pan and sauté garlic and shallot over medium heat until translucent. Add mushrooms and chili and cook 5–7 minutes. Meanwhile rinse the lime hot, pat dry, grate the zest finely and squeeze out the juice. Add parsley to the mushroom mixture and season with salt, pepper, lime juice and zest. Toss in the zucchini noodles, stir for 1 minute, then divide among four plates. Garnish with remaining parsley.
