The Spring Salad by Spoonsparrow is a great refreshment for summer and works wonderfully as a side dish for grilling.
Ingredients
- 1 bundle radishes
- 1 Red Onion
- 1 stalk Parsley
- 2 tbsp olive oil
- 1 tsp coarse mustard
- 1 tsp maple syrup
- 1 Organic lemon
- Salt
- Pepper
Instructions

Wash, trim and slice the radishes thinly. Peel, halve and cut the onion into fine strips. Wash the parsley, shake dry and roughly chop.

Whisk together olive oil, mustard and maple syrup for the dressing. Rinse the lemon hot, grate its zest and squeeze out the juice. Add both to the dressing and season with salt and pepper.

Combine radishes, red onions, parsley and dressing. Plate the spring salad, optionally garnish with more parsley, and serve.
