Simple Apple Cake with Quark

The simple apple cake is topped with quark and then refined with powdered sugar. Not only visually a delight!

Ingredients

  • 240 g flour
  • 1 pinch salt
  • 70 g powdered sugar
  • 100 g butter
  • 5 eggs
  • flour (for the work surface)
  • legumes (for blind baking)
  • butter (for the pan)
  • 500 g quark
  • 150 g sugar
  • 1 tsp grated lemon zest
  • 1 pinch salt
  • 75 g melted butter
  • 2 tbsp Cornstarch
  • 250 g apples
  • powdered sugar (for dusting)

Instructions

    Mix 200 g flour with salt and sugar, sift onto a work surface, press a well in the center, add one egg and butter pieces, and quickly knead into a shortcrust dough. Wrap in foil and chill for 30 minutes. Preheat oven to 180°C (convection). Roll out dough on lightly floured surface and line a buttered quiche pan with it.

    Place parchment paper inside and fill with legumes. Bake in preheated oven for 15-20 minutes. Meanwhile separate eggs, beat whites into stiff peaks. Whisk quark, yolks, and sugar until fluffy. Stir in lemon zest, salt, and fold in melted butter. Mix remaining flour and cornstarch, sift over the mixture, and stir.

    Peel, quarter, core, and finely grate apples. Fold apple grating and meringue into the quark mixture. Spread onto shortcrust base, remove legumes and parchment. Bake for about 40 minutes, covering if needed to prevent excessive browning. Remove, cool, and dust with powdered sugar before serving.
