Ingredients
- 400 g shrimp (prepped)
- 1 Garlic clove
- 1 small onion
- 4 tbsp olive oil
- 1 lemon (juiced)
- 1 bunch herbs of Provence
- 20 ml Pastis for flambéing (45%)
- Lemon slices (for serving)

Peel and finely chop the garlic clove and onion. Wash, dry, shake, and chop the herbs. Sauté the shrimp in 1 tbsp oil slowly around all sides, then remove from pan. Add remaining oil and sauté the garlic and onion pieces, add herbs and deglaze with lemon juice, season with salt and pepper.

Place shrimp in a bowl, flambé with Pastis, distribute onto plates, drizzle with herb sauce, garnish with lemon slices, and serve.
