Halibut with Capers in Sicilian Style

Ingredients

  • 700 g halibut fillet
  • 100 ml dry white wine
  • 1 sprig rosemary
  • 4 tbsp olive oil
  • 1 tbsp capers
  • 4 anchovy fillets (in oil)
  • 2 sprigs tarragon
  • Sea salt
  • pepper (ground)
  • 1 untreated lemon

Instructions

    Preheat the oven to 180°C fan. Wash the halibut, pat dry and cut into portions. Place in a fireproof dish and pour over the white wine.

    Remove rosemary needles and finely chop them. Mix with olive oil, capers and chopped anchovies, then spread over the fish.

    Slice the lemon into rounds. Lay tarragon sprigs on the fish, season with salt and pepper, and top with lemon slices. Bake in the preheated oven for about 20 minutes until golden brown. Remove and serve immediately.
