Ingredients

  • 1 bundle arugula
  • 1 sour apple (e.g., Granny Smith)
  • 1 tbsp Lemon Juice
  • 200 g Sour Cream
  • 150 g plain yogurt
  • 2 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 1 tsp freshly grated horseradish
  • Salt
  • Pepper (freshly ground)
  • a pinch of sugar
  • 1.5 tbsp finely chopped dill
  • 8 pickled herring fillets in oil
  • dill sprigs for garnish

Instructions

    Rinse arugula, wash, trim and dry it. Wash the apple, quarter, core and cut into small pieces; immediately drizzle with lemon juice. Mix sour cream with yogurt, vinegar, olive oil and horseradish, then season with salt, pepper and sugar.

    Fold in the apple pieces and chopped dill. Spread arugula on a plate, arrange the drained herring fillets on top, drizzle with the dill sauce and garnish with dill sprigs.
