Ingredients
- 8 matjes fillets
- 1 Shallot
- 1 tbsp chives rings
- 1 tbsp chopped dill
- 1 lemon
- Pepper (freshly ground)
- 12 pumpernickel crackers
- dill sprigs (for garnish)
- 0.5 Frisée salad
- 2 egg yolks
- 1 tbsp mustard
- 100 ml oil
- 1 tbsp dill
- 1 splash Lemon juice
- Salt
- Pepper (freshly ground)
Instructions

Dice the matjes fillets finely with a sharp knife. Peel and dice the shallot. Combine matjes, shallots, chives, and dill. Zest the lemon, cube the zest, and add to the matjes mixture. Season with pepper.

Whisk egg yolks with mustard for mayonnaise. Gradually drizzle oil while whisking continuously until creamy. Once mayonnaise is smooth, season with lemon juice, salt, and pepper.

Arrange the matjes tartare on pumpernickel crackers. Serve mayonnaise on the side or drizzle over the crackers. Plate with frisée leaves and garnish with fresh dill.
