Ingredients
- 16 fresh shrimp
- 12 chicory leaves
- 0.5 cucumber
- 1 Papaya
- olive oil (cold pressed)
- Salt
- Pepper (freshly ground)
- 3 limes (juice)
- 6 tbsp pine nuts
Instructions

Peel the papaya, halve it, remove the seeds and cut the flesh into strips.

Wash and dry the chicory leaves. Peel, halve, deseed the cucumber and slice thinly.

Toast the pine nuts in a pan without added fat until golden.

Whisk together 5 tbsp oil, salt, pepper and lime juice to make a vinaigrette.

Heat 1 tbsp oil in a pan and sear the shrimp on all sides; season with salt and pepper.

Arrange chicory, 3-4 papaya strips, cucumber slices and shrimp on four plates and drizzle with vinaigrette. Serve immediately.
