- 200 g sweet potatoes
- 5 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 100 g rocket
- 2 Spring Onions
- 125 g black olives (pitted)
- 4 tbsp balsamic vinegar
- 200 g crumbly cream cheese

Wash, peel and cut the potatoes lengthwise into sticks about 1 cm thick. Arrange on a baking sheet lined with parchment paper, drizzle with 2 tbsp oil and sprinkle with pepper. Bake in a preheated oven at 200°C (middle rack) for about 15 minutes until golden brown.

Clean, wash and dry the rocket. Wash and slice the spring onions into rings. Plate both together with the olives. Mix remaining oil with vinegar, salt and pepper, taste and drizzle over the salad. Spread cream cheese and baked sweet potatoes on top of the salad and serve.
