Ingredients
- 1 untreated lime
- 100 g Arugula
- 12 cocktail shrimp (ready-to-eat and cooked)
- 8 cocktail tomatoes
- 100 g mayonnaise
- 2 tbsp coconut cream
- Salt
- black pepper (freshly ground)
Instructions

Cut the lime in half lengthwise and slice 4 wedges for garnish. Squeeze out the juice from the remaining halves.

Wash the arugula, remove tough stems, and shake dry. Rinse the shrimp and pat them dry. Wash the tomatoes and halve them.

Place the salad in bowls and fill with tomatoes and shrimp.

For the dressing whisk mayonnaise with coconut cream, 1-2 tbsp lime juice, salt, and pepper to taste. Drizzle over the salad and serve with a lime wedge on each bowl.
