Shrimp Rice Noodles

Ingredients
- 0.5 red bell pepper
- 150 g thin rice noodles
- 300 g shrimp (pre-cooked)
- 200 g Sugar snap peas
- 1 tbsp fish sauce
- 1 tsp yellow curry paste
- 2 tbsp sesame oil
- 2 tbsp Lime juice
- 4 lime wedges

Wash the bell pepper and cut into fine cubes.

Pour 750 ml boiling water over the rice noodles in a bowl and let them soak for 10 minutes.

Rinse the shrimp in cold water, drain well, then sauté in oil. Wash the sugar snap peas and slice diagonally or split lengthwise; add to the pan and cook briefly with the shrimp.

For the sauce, whisk the curry paste with about 3 tbsp hot noodle water until smooth. Stir in fish sauce, sesame oil, and lime juice. Drain the noodles and cut into bite-sized pieces with scissors. In a bowl combine noodles, shrimp, snap peas, and bell pepper. Mix in the sauce and serve the salad in small bowls garnished with lime wedges.
