- 1 stalk leek
- 1 Garlic clove
- 2 tbsp oil
- 1 tbsp butter
- 1 ripe tomato
- Salt
- Pepper
- 8 basil leaves (briefly fried)
- 4 thin slices ciabatta
- 8 large shrimp (prepped, deveined)

Toast the bread slices in the oven at 180°C briefly, remove and let cool.

Blanch the tomato, quarter it, seed it, and gently flatten the flesh; season with salt and pepper.

Wash and trim the leek, halve lengthwise, cut into strips. Peel and finely chop the garlic. Heat oil with butter in a pan and sauté garlic and leek for about 5 minutes without browning.

Season with salt and pepper, add shrimp and cook over low heat until done. Remove shrimp from the vegetables. Arrange the toasted bread on warmed plates, top with the vegetable mixture, place a tomato slice, arrange shrimp decoratively, and garnish with basil leaves before serving.
