Shrimp Tails with Tofu and Spring Onions

Ingredients

  • 300 g scampi (pre-cooked)
  • 8 spring onions
  • 200 g smoked tofu
  • soy sauce
  • 4 tbsp Lemon juice
  • 1 stalk lemongrass
  • 2 shallots
  • 1 piece ginger (20 g)
  • 4 tbsp wok oil
  • 2 Garlic cloves

Instructions

    Wash and trim the spring onions. Finely chop the white parts, cut the green parts into 1-2 cm pieces.

    Pat the scampi dry. Pat the smoked tofu dry and cube it into 1-2 cm pieces.

    Clean and finely mince the lemongrass. Peel and finely mince the shallots and garlic. Peel and grate the ginger finely.

  4. 4.

    Heat 2 tbsp wok oil, then sauté ginger, shallots, spring onion white parts, lemongrass and garlic. Add tofu, scampi and spring onion greens, stir-fry for 4-5 minutes. Season with soy sauce.
