Ingredients

  • 8 sea bass fillets
  • 150 g Smoked salmon
  • 3 shallots
  • 2 EL Butter
  • 1 bundle dill
  • 0.4 l sparkling wine
  • 2 egg yolks
  • 4 EL whipping cream
  • Salt
  • Pepper

    Wash the sea bass, pat dry, lay flat on the work surface and place slices of smoked salmon on top. Wash and tear dill, spread over the smoked salmon, season with pepper. Roll the fillets from the head side and wrap a strip of crinkled foil around them for better grip.

    Peel and finely chop shallots; sauté in butter in a large pan until translucent. Add the sea bass rolls and pour sparkling wine over them. Cover and cook over medium heat for 10 minutes. Remove the rolls and keep warm. Reduce the cooking liquid and pour into a metal bowl. Place the bowl in a water bath and whisk in egg yolks and cream until a thick sauce forms. Season with salt and pepper. Arrange the rolls on plates and serve with the sauce. Pair with wild rice and steamed zucchini.
