Fresh, quick, and healthy shrimp salad with avocado – perfect for a light starter!
Ingredients
- 2 romaine lettuce heads
- 1 lemon
- 1 tsp Honey
- 5 tbsp olive oil
- 1 bunch Basil
- Salt
- Pepper
- 1 Avocado
- 400 g cooked shrimp
Instructions

Wash, trim, and dry the salad; distribute the leaves into four bowls.

Squeeze the lemon. For the dressing whisk lemon juice with 1 tbsp water and honey, then fold in olive oil.

Wash, shake off excess water, pick and chop basil leaves. Mix with the dressing and season with salt and pepper.

Peel the avocado, halve it, remove the pit, and slice the flesh. Toss with shrimp and dressing. Distribute the shrimp salad onto the four bowls and enjoy.
