Shrimp Pasta with Cream Sauce

Ingredients
- 1 handful basil
- 1 Shallot
- 1 Garlic clove
- 2 tbsp butter
- 1 tbsp flour
- 100 ml dry white wine
- 200 ml vegetable broth
- 400 g penne pasta
- Salt
- 500 g shrimp (peeled, deveined, except tail segment)
- 2 tbsp olive oil (or regular olive oil)
- 1 dried chili pepper
- 1 tsp paprika flakes
- pepper (ground)
- 100 g crème fraîche
- 1 untreated lemon (juice and zest)

Rinse the basil, shake dry, pluck leaves. Finely chop 3-4 leaves. Peel and finely dice the shallot and garlic. Sauté together in hot butter until translucent, then dust with flour. Pour in wine while stirring, add broth, and let simmer gently for a few minutes.

Cook pasta in boiling salted water al dente. Rinse shrimp and pat dry. In hot basil oil, fry shrimp 2-3 minutes on medium heat, turning occasionally. Grate the chili, sprinkle paprika flakes over shrimp, season with salt, pepper, and a splash of lemon juice.

Finish sauce by adding crème fraîche, adjust seasoning with salt, pepper, and lemon juice, then stir in chopped basil.

Plate pasta with a bit of sauce, top with shrimp and basil leaves, garnish with lemon zest, and serve remaining sauce on the side.
