Ingredients
- 400 g brown mushrooms
- 2 shallots
- 0.25 bunch fresh thyme
- 2 tbsp butter
- 50 ml dry white wine
- 250 ml instant vegetable broth
- 250 g mascarpone
- Salt
- ground pepper
- grated parmesan for serving
- 400 g penne pasta

Rub and quarter the mushrooms with a kitchen towel, finely dice the shallots, rinse the thyme. Set aside some stems; pinch off leaves from the rest and chop finely.

Cook the pasta in plenty of boiling salted water until al dente according to package instructions. In the pot melt butter, sauté shallots and mushrooms. Deglaze with white wine and vegetable broth, simmer for about 5 minutes. Stir in mascarpone and chopped thyme. Season with salt and pepper, mix with hot pasta. Sprinkle grated parmesan and garnish with thyme before serving.
