Macaroni with Cheese and Broccoli

- 400 g macaroni
- 1 onion
- 400 g broccoli florets
- 2 tbsp butter
- 2 tbsp flour
- 300 ml milk
- 100 ml heavy cream
- 150 g grated cheddar cheese
- 1 tbsp freshly chopped parsley

Preheat the oven to 180°C (350°F) with both fan and top heating.

Cook the macaroni in salted water until very firm. Drain and rinse under cold water. Peel and finely chop the onion. Blanch the broccoli florets in salted water for 3-4 minutes until firm, then rinse and drain.

Sauté the onions in hot butter for 1-2 minutes until translucent, add the flour and stir briefly, then pour in cream and milk while stirring. Simmer for about 5 minutes, stirring continuously.

Combine the macaroni with broccoli and half of the cheese, transfer to a baking dish or copper pan. Pour the sauce over it, sprinkle the remaining cheese on top, and bake in the preheated oven for 15-20 minutes until golden brown. Garnish with parsley before serving.
