A refreshing shrimp pasta salad with cilantro for aromatic variation in the bowl!

Ingredients
- 500 g whole wheat penne
- Salt
- 1 bunch cilantro
- 50 g Parmesan (1 piece)
- 3 tbsp ricotta
- 3 tbsp white balsamic vinegar
- 2 tbsp olive oil
- 300 g pre-cooked shrimp
- black pepper (ground)
Instructions

Cook pasta according to package instructions in plenty of boiling salted water until al dente, drain and let cool.

Wash cilantro, shake dry, pluck leaves and finely chop. Grate parmesan. Whisk ricotta with parmesan, balsamic vinegar and olive oil until smooth.

Combine pasta with shrimp, cilantro and the ricotta-parmesan sauce; season with salt and pepper to taste. Serve in individual bowls.
