Bulgur Herb Salad

Bulgur-herb salad from Spoonsparrow is always really good.
Ingredients
- 400 g bulgur
- 5 spring onions
- 2 Garlic cloves
- 400 g Tomatoes
- 5 tbsp parsley
- 3 tbsp lemon balm
- 4 Tbsp lime juice
- 6 tbsp Olive oil
- Salt
- pepper (ground)

Place the bulgur in about 800 ml cold salted water, bring to a boil, simmer for about 10 minutes over low heat, then let it stand for 15 minutes. The bulgur should be cooked but still have a slight bite.

Trim and rinse the spring onions, slice into rings. Peel and finely chop the garlic cloves. Wash the tomatoes, halve them, remove the seeds, and dice. Rinse and dry the parsley and lemon balm, then finely chop. Let the cooked bulgur cool slightly, then mix with the spring onions, garlic, tomatoes, and fresh herbs. Stir in the lime juice and olive oil, and season with salt and pepper.
