Ingredients

  • 1 red chili pepper
  • 2 tbsp lemon juice
  • 2 tbsp white balsamic vinegar
  • 1 tsp brown sugar
  • 6 tbsp Olive oil
  • Salt
  • pepper (ground)
  • 400 g large shrimp, peeled and deveined
  • 1 Red Onion
  • 300 g cherry tomatoes
  • 1 handful coriander leaves

Instructions

    Wash, deseed, and finely chop the chili pepper. Mix with lemon juice, balsamic vinegar, brown sugar, and 4 tbsp oil. Season with salt and pepper.

    Rinse the shrimp, pat dry, and sauté in the remaining oil for 2–3 minutes. Season with salt and pepper.

    Peel and halve the onion, cut into strips. Wash and halve the tomatoes. Peel, halve, pit, and cube the avocados. Shake off excess water from coriander leaves and remove stems. Combine all salad ingredients with the dressing and serve seasoned.
