Shrimp Noodle Salad

Ingredients

  • 1 bundle watercress
  • 1 bundle coriander
  • 150 g thin rice noodles
  • 300 g shrimp (pre-cooked)
  • 1 tsp green curry paste
  • 1.5 tbsp fish sauce
  • 2 tbsp sesame oil
  • 2 tbsp Lime juice

Instructions

    Wash coriander and watercress, shake dry and pick off leaves.

    Cook rice noodles according to package instructions.

    Rinse shrimp in a sieve under cold water and drain well.

  4. 4.

    For the sauce whisk curry paste with about 3 tbsp hot noodle water until smooth. Stir in fish sauce, oil and lime juice. Drain noodles and cut into bite‑sized pieces with scissors. In a bowl combine noodles, shrimp, watercress and coriander. Mix in the sauce and serve the salad in small bowls.
