Ingredients
- 0.25 watermelon (small, low seed count)
- 1 small Galia melon
- 600 g shrimp (prepped, peeled, deveined)
- 2 tbsp sunflower oil
- 50 ml Vegetable broth
- 1 bunch mint
- 2 tbsp lemon juice
- 4 tbsp white balsamic vinegar
- Salt
- Pepper
Instructions

Halve the Galia melon, remove seeds and use a melon baller to scoop balls. Do the same with the watermelon.

Wash the mint, set aside 4-6 small sprigs for garnish, pluck leaves from the rest.

Heat oil in a pan, add shrimp and sauté briefly. Pour in broth, add mint leaves, season with salt and pepper, simmer for about 5‑8 minutes over medium heat, then stir in lemon juice.

Remove mint leaves, mix with melon balls, taste with vinegar, fill cups, garnish immediately with mint and serve.
