Shrimp Melon Skewers

Ingredients

  • 0.5 Galia melon
  • 0.5 Charentais melon
  • 16 large shrimp
  • 2 sprigs Rosemary
  • 1 tsp crushed fennel seeds
  • 1 lemon (juice)
  • 1 tbsp liquid honey
  • 4 tbsp olive oil
  • Salt
  • freshly ground pepper
  • basil (for garnish)

Instructions

    Pit the melons and use a large melon baller to scoop about 16 balls. Rinse the shrimp and pat dry. Alternate threading melon balls and shrimp onto wooden skewers.

    Rinse rosemary, pat dry, strip leaves and finely chop. Mix fennel, lemon juice, honey, oil, salt and pepper; brush the skewers with this mixture. Grill over medium heat, turning regularly for about 8 minutes until golden brown, brushing again with the sauce as needed.

    Arrange on small plates, drizzle remaining sauce over the skewers, and garnish with basil before serving.
