Baked Yufka Dough Packet with Spinach Filling

- 4 sheets yufka dough
- 600 g fresh spinach
- 2 cloves garlic
- 4 Spring Onions
- 2 tbsp olive oil
- 3 eggs
- 300 g sheep cheese
- Salt
- pepper (ground)
- olive oil (for brushing)

Fold the yufka dough apart, spritz with a little water and cover with a damp cloth. Let rest for about 30 minutes. Preheat oven to 180°C fan.

Meanwhile, rinse, wash and dry-spin the spinach. Peel garlic cloves and cut spring onions into fine dice or rings. Heat oil in a large pan, sauté garlic and spring onions, add spinach, let wilt, remove from heat and cool. Beat eggs and mix with crumbled sheep cheese. Add spinach (with minimal liquid) and season with salt and pepper.

Brush each yufka sheet with about 1 tbsp olive oil and spread roughly 2 tbsp of filling on it, leaving a 5 cm border. Fold dough into rectangular packets so there is at least one more layer of dough. Brush again with olive oil and place seam side down on parchment‑lined baking tray. Bake in oven for 25-30 minutes until golden brown.
