Ingredients

  • 4 tbsp olive oil
  • 800 g thick sheep cheese (4 slices)
  • 2 tsp dried oregano
  • Pepper
  • 2 Garlic cloves
  • 2 bunches spring onions
  • 2 red bell peppers
  • 2 tbsp chopped parsley
  • 2 tbsp vinegar
  • Salt

Instructions

    Preheat oven to 200°C. Brush a sheet of aluminum foil, slightly larger than the cheese slices, with oil and place the cheese slices on it. Sprinkle oregano and pepper over the cheese. Drizzle each slice with 1 tsp oil. Peel garlic cloves, slice them thinly, and distribute over the cheese. Fold the foil over the prepared cheese and bake in the preheated oven (200°C; middle rack) for about 20 minutes.

    Clean, rinse, and chop spring onions. Clean, rinse, seed, remove white membranes from bell peppers, and finely dice. Mix spring onions, diced peppers, and parsley. Whisk vinegar, salt, pepper, and remaining oil together, pour over the prepared mixture, and season to taste.

    For serving, gently lift the sheep cheese from the foil and plate it with the paprika salsa on a dish.
