Ingredients

  • 200 g silken tofu
  • 3 tbsp soy cream
  • 3 tbsp Lemon juice
  • 1 tsp Mustard
  • 2 tsp locust bean gum
  • Salt
  • Pepper (freshly ground)
  • 2 kohlrabi
  • 2 Apples (Granny Smith)
  • 40 g Walnuts
  • 2 tbsp chopped flat‑leaf parsley
  • 1 tsp sugar

Instructions

    Drain the silken tofu and blend it with soy cream, 1 tbsp lemon juice, mustard and locust bean gum. Season with salt and pepper.

    Peel and grate the kohlrabi; peel, halve, core and grate the apples as well. Mix the grated kohlrabi and apples with the remaining lemon juice.

    Coarsely chop the walnuts and combine them with parsley and the grated mixture to make a cabbage radish salad. Season with salt, pepper and sugar.

    Arrange the cabbage radish salad on plates and drizzle the tofu dressing over it.
