Fruity Tofu Salad

Ingredients
- 3 nectarines
- 2 Apples
- 1 lemon
- 0.75 handful mixed greens (field lettuce, purslane, watercress, oak leaf lettuce, sorrel... )
- 0.75 handful mixed herbs (field lettuce, purslane, watercress, oak leaf lettuce, sorrel... )
- 50 g roasted pine nuts
- 8 slices natural tofu
- 50 ml red wine vinegar
- 1 tsp dried finely grated Herbs de Provence
- 1 tsp Honey
- Salt
- Pepper
- 3 tbsp argan oil
Instructions

Place the tofu with red wine vinegar, herbs, honey, salt, pepper and oil in a bowl and marinate in the refrigerator for at least 30 minutes.

Peel the apples, quarter them, core and cut into pieces. Squeeze lemon juice and mix with the apple pieces. Wash the nectarines, halve them, remove seeds and slice into wedges. Wash the greens, shake dry, rinse and trim if necessary.

Mix the salad with the fruits and pine nuts, arrange on plates with the marinated tofu. Serve immediately.
