Shrimp Mango Cocktail

Ingredients
- 1 large ripe mango
- 1 red bell pepper
- 1 bunch arugula
- 1 handful soy sprouts
- 12 pre-cooked shrimp (peeled and deveined)
- 2 Garlic cloves
- 4 tbsp olive oil
- 1 untreated orange
- 3 tbsp balsamic vinegar
- Salt
- ground black pepper

Peel the mango, cut off the stone, slice into thick rounds and dice. Wash, trim, halve, seed, remove the white skin of the bell pepper and cut the flesh into strips. Rinse the arugula, dry it in a salad spinner and roughly chop. Combine all these ingredients with the sprouts in a large bowl.

Wash and pat the shrimp dry. Peel and mince the garlic, then sauté the shrimp briefly in 1 tbsp hot oil in a pan. Zest the orange and squeeze out its juice. Add both to the shrimp, set aside and let it rest.

Whisk the balsamic vinegar with the remaining oil, salt, and pepper, then mix into the salad ingredients in the bowl. Taste, serve in small bowls topped with the orange‑shrimp garnish.
