Shrimp Cocktail with Salad and Bell Peppers

Ingredients
- 16 cooked and peeled shrimps
- 4 large lettuce leaves
- 50 g mushrooms
- 3 tbsp mayonnaise
- 1 tbsp Lemon Juice
- 1 pinch sugar
- Salt
- Pepper (freshly ground)
- 8 large pieces of pickled red bell pepper strips
- 16 shrimps (headless)
- 2 tbsp olive oil
- 100 g pickled red bell peppers
- 100 g pickled yellow bell peppers

Instructions

Rinse the shrimp under cold water, drain and chop.

Wash lettuce leaves, shake dry and cut into fine strips. Clean mushrooms with a brush and finely chop them.

Whisk mayonnaise and lemon juice together, season with sugar, salt, and pepper.

Combine shrimp, salad strips, mushrooms, and sauce.

Pat pickled peppers dry and use a cutter (≈10 cm diameter) to cut 8 circles (place pepper pieces side by side). Distribute 4 circles on the plate. Place the oiled cutter over them and add the shrimp cocktail, press lightly and lift the cutter. Then lay the remaining pepper circles on top.

Blend pickled red and yellow peppers separately with a little olive oil into a sauce-like consistency, season with salt and pepper.

Rinse shrimps, pat dry and sauté in hot olive oil in a pan for 3–4 minutes.

Arrange shrimps on the cocktails and decorate the plates with the bell pepper sauces and a drizzle of olive oil.
