Ingredients

  • 1 ripe Mango
  • 150 g cantaloupe (flesh)
  • 250 g cucumber
  • 4 Spring Onions
  • 2 red chili peppers
  • 3 limes (juice)
  • 2 tsp Liquid Honey
  • Sea salt
  • 20 g chopped coriander
  • 250 g pre-cooked cocktail shrimp

    Peel the mango, cut the flesh from the pit and dice. Dice the cantaloupe flesh. Peel the cucumber, halve it lengthwise, remove the seeds with a spoon and dice the flesh. Trim and wash the spring onions, slice them diagonally into thin rings.

    Wash the chili peppers, halve them lengthwise, remove the seeds and cut into fine strips. Mix lime juice with honey and season with salt. Combine all ingredients with the dressing and fill four glasses; serve immediately.
