Ingredients

  • 4 large shrimp
  • Salt
  • 1 untreated lime
  • 1 tbsp chopped chives
  • 3 tbsp lemon oil
  • 1 Garlic clove
  • 2 slices toast bread
  • sweet chili sauce (Asian grocery)
  • coriander (for garnish)

Instructions

    Wash the shrimp, remove the head and shell except for the tail segment. Split lengthwise and devein. Cook in boiling salted water 1-2 minutes. Wash the lime, finely grate the zest and squeeze some juice. Mix the juice with lime zest, chives and oil. Add the shrimp and marinate. Toast the bread slices in a toaster or oven briefly. Drizzle with some of the dressing.

    Fill the chili sauce into four glasses and garnish with coriander. Top the toast with shrimp and serve with the sauce.
