Shrimp with Lime Coconut Sauce

Ingredients

  • 12 shrimp
  • Salt
  • 2 Spring Onions
  • 1 untreated lime
  • 2 cm fresh ginger
  • 1 Green Chili Pepper
  • four-spice powder
  • 250 ml coconut cream

Instructions

    Blanch the shrimp in salted water briefly, then shock them in cold water and drain well.

    Wash, trim, and finely chop the spring onions. Wash the lime, pat dry, grate the zest, halve it, and cut a few thin slices for garnish. Squeeze the juice from the remaining halves. Peel and finely grate the ginger. Wash the chili pepper, halve it, trim, and finely chop it.

    In a bowl combine the grated ginger, lime zest, chopped spring onions, coconut cream, four-spice powder, salt, and lime juice; whisk until well mixed.

    Taste and adjust seasoning with more salt or lime juice if needed. Serve the shrimp as an appetizer garnished with lime slices.
