Baked Tomatoes with Spinach Filling
Tomato lovers will adore the baked tomatoes with spinach filling from Spoonsparrow!
Ingredients
- 4 medium meat tomatoes
- 400 g spinach
- 1 onion
- 1 Garlic clove
- 1 tbsp butter
- 80 g grated Emmental cheese
- Salt
- Pepper (freshly ground)
- basil (for garnish)
Instructions

Wash the tomatoes, cut off a lid and remove seeds and pulp with a spoon. Season the inside of the tomatoes with salt and pepper.

Peel the onion and dice it finely. Peel the garlic and mince it.

Wash the spinach, discard stems and drain well.

Sauté the onion and garlic in hot butter until translucent, add the spinach and cook for about 5 minutes while stirring occasionally; season with salt and pepper and let cool slightly. Mix the spinach with cheese and fill the tomatoes. Place them in a greased baking dish, set the tomato lids on top, and bake in a preheated oven at 200 °C fan-forced for about 15 minutes.

Serve the baked tomatoes with spinach filling garnished with basil.
