Ingredients
- soft butter (for the baking sheet)
- 250 g puff pastry
- 600 g currants
- 2 tbsp Cornstarch
- 2 tbsp vanilla sugar
- 400 ml whipping cream
- 1 vanilla bean (aroma)
- 50 g powdered sugar

Preheat the oven to 200°C fan-forced. Butter a baking sheet.

Roll out the dough as needed and lay it on the sheet, pressing up a small edge. Wash, trim, and pat the currants dry. Toss them with cornstarch and vanilla sugar, then spread over the pastry. Bake in the oven for about 25 minutes until golden brown. Remove from the oven and let cool.

Whip the cream with vanilla bean aroma and powdered sugar until stiff peaks form. Just before serving, spread the cream over the tart and cut into pieces.
