Banana Tart with Puff Pastry

A fresh banana tart made with puff pastry and a creamy quark filling, topped with vanilla jam and lemon zest. Try this recipe and many others from Spoonsparrow!

Ingredients

  • 400 g puff pastry
  • 250 g quark
  • 1 tsp freshly chopped ginger
  • 1 egg
  • 2 tbsp sugar
  • 3 bananas
  • 2 tbsp lemon juice
  • 1 Vanilla bean
  • 80 g lemon jam

Instructions

    Preheat the oven to 200°C (fan) and line a baking tray with parchment paper.

    Roll out the puff pastry into a square about 20x30 cm and place it on the tray. Mix the quark with ginger, egg and honey, then spread it over the dough leaving a 1 cm border.

    Peel the bananas and slice them lengthwise. Drizzle with lemon juice. Scrape the vanilla bean's seeds and mix with the jam in a saucepan; warm until melted.

    Layer the quark slightly overlapping with banana slices and brush with the vanilla jam.

    Bake in the oven for 30-40 minutes until golden brown.
