Shortbread Cookies

- 300 g flour
- 100 g sugar
- 1 packet vanilla sugar
- 1 egg
- 200 g butter
- 1 egg yolk
- 150 g powdered sugar
- 30 g chopped pistachios

Gather flour, sugar, and vanilla sugar on a work surface; place the egg in the center and set butter pieces around it. Quickly mix everything together, knead swiftly into a ball, wrap in foil, and refrigerate for 1 hour. Roll out the dough to about 4 mm thickness on a work surface.

Cut small triangles or stars as desired. Place on greased baking sheets and brush the tops with beaten egg yolk. Bake in a preheated oven at 180°C (mid rack) for about 12 minutes until golden yellow. Remove and let cool. For decoration, whisk powdered sugar with just under 2 tablespoons of water to make a thick glaze.

Fill a small freezer bag with the glaze, cut a small tip, and use it to decorate the stars. Also drizzle some glaze onto the center of the triangles and sprinkle pistachios on top, pressing them lightly in place. Let dry.
