Amaretto Almond Cookies

- 150 g soft butter
- 80 g whole cane sugar
- 1 egg
- 20 ml alcohol-free amaretto
- 100 g spelt whole-grain flour
- 150 g peeled ground almonds
- 1 tsp Baking powder
- 100 peeled whole almonds

Beat the butter with the whole cane sugar until fluffy. Add the egg and amaretto, mixing well. Combine the flour with the ground almonds and baking powder, then fold into the wet mixture and knead. If needed, add a little more ground almonds. With damp hands form small balls and place them on a parchment-lined baking sheet. Insert two whole almonds into the center of each cookie. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for 10–15 minutes. Remove and cool on a wire rack.
