Ingredients

  • 1.5 kg pork short ribs
  • 1 tbsp cumin (crushed)
  • 1 garlic clove (finely chopped)
  • 3 tbsp oil
  • 2 sprigs Rosemary
  • 1 piece lemon zest (untreated)
  • 800 ml meat broth
  • 500 g Potatoes
  • 2 onions
  • Salt
  • Pepper

Instructions

    Wash the ribs, pat dry and rub with salt, pepper, cumin and garlic.

    Preheat oven to 180°C (350°F).

    Sear pork ribs in hot oil on all sides. Deglaze with broth, add one rosemary sprig and lemon zest, then roast on lower rack for about 45 minutes.

    Remove rosemary and lemon zest from sauce, portion the meat and arrange with potato vegetables. Pour seasoned stock over and garnish with remaining rosemary before serving.
